FRANÇOIS ROUX
A PASSION FOR SWEET
I was born in Ploumanac’h, commune of Perros-Guirec, a few decades ago. I am returning to the country after having lived in Paris and, most recently, in New York and Los Angeles. Since the age of 12, I have been a fan of baking. All the members of my family still remember my first experiences with shortcrust pastry, profiteroles bathed in chocolate or even (how daring!) Norwegian omelette.
I perfected my self-taught technique and learning at the Ferrandi school in Paris and during several long-term internships with pastry chef Christian Lejour, within the Atelier des Chefs.
Today I want to communicate my passion and my know-how to others and it is with this idea in mind that La Forêt aux Gâteaux was born.
It is with great pleasure that I will welcome you to my home to celebrate together the wonderful alchemy of pastry as I have learned it over the years.
